Lacy Oatmeal Cookies

Lacy Oatmeal Cookies are crispy and chewy at the same time. They turn out thin so they are almost see-through like lace. This version also has coconut which adds to the nutty, buttery flavor.

Ingredients

  • ½ Cup Flour sifted
  • ½ teaspoon Salt
  • Cup Sugar
  • 1 Cup Butter room temperature
  • 2 Eggs
  • ½ teaspoon Vanilla
  • 1 Cup Quick Oats uncooked
  • ½ Cup Coconut grated or shredded

Instructions

  • Preheat oven to 350°.
  • Grease cookie sheet and set aside.
  • Sift dry ingredients together and add to mixing bowl.
  • Add butter, eggs, and vanilla.
  • Mix thoroughly.
  • Stir in oats and coconut.
  • Drop from tablespoon onto cookie sheet.
  • Use knife dipped in cold water to flatten dough.
  • Bake at 350° for 8-10 minutes.
  • Remove from cookie sheet and onto cooling rack immediately.

Notes

  • A whisk may be used in place of a flour sifter to sift dry ingredients.
  • Cookies should be removed from the cookie sheet and onto a cooling rack immediately to prevent them from sticking to the pan.
  • To attain the correct texture, flatten cookies with a knife that has been dipped in cold water before baking.
  • To be sure that butter is at room temperature, set it out an hour before you plan to make the recipe.
