Blueberry Melba Parfaits

Ingredients

10 ounce Package Frozen Red Raspberries
Thawed
¼
Cup
Sugar

Tablespoon
Cornstarch

16 ounce Package Frozen Blueberries
Thawed and Drained
2
teaspoons
Lemon Juice
1
Quart
Vanilla Ice Cream
2
Tablespoons
Frozen Orange Juice Concentrate
Thawed
1
teaspoon
Ground Cinnamon
Instructions
Scrape ice cream into a bowl.
Stir ice cream to soften.
Stir in orange juice concentrate and cinnamon.
Freeze 2 to 3 hours or until firm.
While ice cream mixture is freezing, drain raspberries.
Pour raspberries into measuring cup.
Add enough water to make 1 cup.
In a saucepan, combine sugar, cornstarch, and raspberries.
Cook and stir until thickened and bubbly.
Remove from heat.
Add blueberries and lemon juice.
Stir thoroughly.
Cover berry mixture and chill in refrigerator.
To serve, alternately layer ice cream mixture and fruit mixture in 6 serving glasses.
Serve immediately.
Notes
Let ice cream sit out for at least 30 minutes before use.
Set out all other frozen ingredients for at least an hour before use.
For best presentation, serve in clear glasses.
Make the mixtures the day before for best results.
Just before serving, layer the ice cream mixture with the berry mixture.
