Instructions
In a large bowl, stir together shredded carrots, shredded cabbage, and raisins.
In a separate bowl,
whisk
together the salt, lemon juice, sugar, and mayonnaise until combined.
Pour over the vegetable mixture and toss together to combine.

Helpful Tips
Use freshly shredded carrots for the best crunch and sweetness. Pre-shredded
ones can be a little dry or rubbery.
Finely shred the cabbage
so it blends well with the carrots and doesn’t overpower the texture.
Chill the salad
for at least 30 minutes before serving. It lets the flavors meld and makes it extra refreshing.
