Griddle Scones
Griddle scones are perfect for summertime as they don't require an oven! These scones can be made on the stove and are quick and easy!

Flour
Sifted

Baking Powder

Sugar

teaspoon
Salt

Cinnamon

Shortening

Eggs

Instructions
Preheat griddle or skillet over medium heat or set electric griddle to 325°.
Sift flour, baking powder, sugar, cinnamon, and salt together.
Cut in shortening until mixture looks like crumbs.
Make a hollow in the center.
Beat eggs slightly.
Combine eggs with milk and stir into hollow in dry ingredients with fork until all ingredients are moistened. Do not overmix.
Place on floured board and knead carefully 5 or 6 times.
Roll out to ½ inch thick and cut with 2-inch biscuit cutter.
Place on ungreased griddle or skillet.
Bake approximately 10 minutes on one side then turn and bake approximately 10 minutes on the other side.
