Instructions
Preheat the oven to 375℉.
Grease a
cookie sheet
and set aside.
Use a
mixer
to cream the butter.
Add the sugar and combine until smooth.
Mix in the pumpkin, egg, and vanilla. Beat well.
In a separate
bowl
, sift together the flour, baking powder, baking soda, cinnamon, and salt.
Gradually add the flour mixture to the pumpkin mixture while mixing. Mix well.
Drop by spoonfuls onto the greased cookie sheet.
Bake at 375℉ for 10-15 minutes, or until toothpick inserted in the center comes out clean.
