Quick Pudding Cookies
Pudding Cookies are easy to make and use Bisquick, instant pudding, and a few kitchen staples. They are perfect for potlucks or a quick dessert!

- 1 Package Chocolate Instant Pudding 4 servings size
- 1 Cup Bisquick
- ¼ Cup Shortening
- 1 Egg unbeaten
- 2 Tablespoons Milk
Preheat oven to 375°.
Stir pudding mix and Bisquick together in medium-sized bowl.
Add shortening and use a pastry blender or two forks to blend until mixture looks like coarse meal.
Stir in egg and milk thoroughly.
Roll into small balls and place on ungreased cookie sheet.
Flatten balls with a fork.
Bake at 375° for 10-12 minutes.
Makes about 2 dozen cookies.
- Butter-flavored shortening adds more flavor than plain shortening.
- Shortening in stick form is easier to measure.
- This recipe makes 2 dozen. You may want to double it if you are making for a large group.
- Best stored in a container with a loose-fitting cover.
- For the best flavor, eat within 7 days.
