Quick Pudding Cookies Recipe

Vintage recipes are my absolute favorite, especially simple ones like this recipe for Pudding Cookies. Don’t get me wrong, I enjoy the more complicated dishes as well, but sometimes it’s nice to make something a little easier.
Pudding Cookies are made with Jell-O pudding and Bisquick, two ingredients I usually have in my kitchen. I have never thought to put them together, though, which is what makes these cookies so unique and delicious!
This recipe is new to me, but I tried it and loved it, so I thought others would too! It’s always nice to find new ways to use ingredients you might already have.
What Ingredients Will I Need for Pudding Cookies?
- Chocolate Instant Pudding
- Bisquick
- Shortening
- Egg
- Milk
What Substitutions Can I Make?
This recipe can be changed based on your preferences and the ingredients you have available.
- Butterscotch, vanilla, cheesecake, or pistachio pudding can be used instead.
- Pancake mix can be used in place of Bisquick, which I found so interesting! Who would have thought you could make cookies with pancake mix? Very cool!
Helpful Tips for Pudding Cookies
- Butter-flavored shortening adds more flavor than plain shortening.
- Shortening in stick form is easier to measure.
- This recipe makes 2 dozen. You may want to double it if you are making for a large group.
- Best stored in a container with a loose-fitting cover.
- For the best flavor, eat within 7 days.

Quick Pudding Cookies
Ingredients
- 1 Package Chocolate Instant Pudding 4 servings size
- 1 Cup Bisquick
- ¼ Cup Shortening
- 1 Egg unbeaten
- 2 Tablespoons Milk
Instructions
- Preheat oven to 375°.
- Stir pudding mix and Bisquick together in medium-sized bowl.
- Add shortening and use a pastry blender or two forks to blend until mixture looks like coarse meal.
- Stir in egg and milk thoroughly.
- Roll into small balls and place on ungreased cookie sheet.
- Flatten balls with a fork.
- Bake at 375° for 10-12 minutes.
- Makes about 2 dozen cookies.

I am never one to follow a recipe (lol)! I substituted utter for the shortening, same amount, added about 1/2 cup sweetened coconut, 1/2 cup chocolate chips, and 1/2 cup chopped toasted walnuts. Instead of flattening with a fork, I used the bottom of a glass dipped in water. Wonderful!

I’m just curious, why 1 tablespoon less milk for butterscotch, and I’m wondering about other flavors of pudding, I want to try it with cheesecake, flavored pudding, lemon, pudding, etc., and I’m wondering what milk ratio to use

Hi Brian, It is a vintage 1950s recipe of my grandmother’s and that is what her notes said for butterscotch. I did some research based on your question, and it looks like 2 tablespoons of milk is fine no matter the flavor these days. I will adjust the recipe accordingly. Thank you for asking!
