Mashed Potato Cookies

Ingredients

  • 2 Cups Flour sifted
  • 2 teaspoons Baking Powder
  • 1 teaspoon Cinnamon
  • ¼ teaspoon Cloves
  • ½ teaspoon Nutmeg
  • ½ teaspoon Salt
  • ½ Cup Raisins
  • ¼ Cup Nuts coarsely chopped
  • ½ Cup Sugar
  • ¾ Cup Corn Syrup
  • 1 Cup Butter
  • Cup Mashed Potatoes hot
  • 1 Egg
  • Sugar extra to sprinkle on top

Instructions

  • Preheat oven to 375°
  • Grease cookie sheet and set aside.
  • Sift flour, baking powder, spices, and salt together.
  • Stir in raisins and nuts.
  • Cream together sugar, corn syrup, and butter.
  • Beat into mashed potatoes.
  • Combine all ingredients and stir.
  • Drop tablespoonfuls of batter onto cookie sheet.
  • Brush with beaten egg and sprinkle with sugar.
  • Bake at 375° for 15 minutes, or until toothpick inserted in center comes out clean.

Notes

  • A whisk can be used in place of a flour sifter
  • An Adjustable Measuring Cup makes measuring corn syrup much easier
  • A cookie scoop makes it easier to measure and scoop cookie dough evenly
