Yes, Mashed Potato Cookies are a real thing! Adding mashed potatoes to the batter makes the cookies soft and moist, without adding potato flavor. I wasn’t sure at first, but they really are quite delicious. This recipe has plenty of spices to make these cookies very flavorful, too!

Variations and Substitutes
- Substitute raisins with craisins (dried cranberries)
- Omit raisins and/or nuts
- Use allspice in place of cinnamon
- Vary the type of nuts used. I used walnuts, but pecans would also be delicious.

Final Thoughts
I was pleasantly surprised with how delicious these cookies tasted. It was hard to get some people to try them because they knew mashed potatoes were in them. Most people were willing to try them, though. Next time, I am not going to tell my friends and co-workers that these cookies contain mashed potatoes until after they take a bite and say how good they are. Then, I will surprise them by telling them that they contain mashed potatoes. It would be fun to see their reactions. What do you think? Mashed Potato Cookies
Ingredients
- 2 Cups Flour sifted
- 2 teaspoons Baking Powder
- 1 teaspoon Cinnamon
- ¼ teaspoon Cloves
- ½ teaspoon Nutmeg
- ½ teaspoon Salt
- ½ Cup Raisins
- ¼ Cup Nuts coarsely chopped
- ½ Cup Sugar
- ¾ Cup Corn Syrup
- 1 Cup Butter
- 1¼ Cup Mashed Potatoes hot
- 1 Egg
- Sugar extra to sprinkle on top
Instructions
- Preheat oven to 375°
- Grease cookie sheet and set aside.
- Sift flour, baking powder, spices, and salt together.
- Stir in raisins and nuts.
- Cream together sugar, corn syrup, and butter.
- Beat into mashed potatoes.
- Combine all ingredients and stir.
- Drop tablespoonfuls of batter onto cookie sheet.
- Brush with beaten egg and sprinkle with sugar.
- Bake at 375° for 15 minutes, or until toothpick inserted in center comes out clean.

Do the mashed potatoes have to be hot? I have leftover mashed potatoes from Thanksgiving in the refrigerator. If so, would reheating them in the microwave be okay?

Yes, they do need to be hot. Reheating them in the microwave should be fine. I haven’t done it, but as long as they’re heated through they should be fine. Let me know how they turn out. 🙂

Can sweet potatoes be used?
I have family that cannot eat from the nightshade family.

I have not tried them with sweet potatoes, but they should work. Most of the time, sweet potatoes can be used as a substitute for white potatoes. The flavor will be slightly different, but the spices would go great with sweet potatoes too. Let me know if you try it and how it turns out. 🙂
