Shirred Eggs are a classic dish featuring baked eggs with heavy cream, seasoned with a pinch of salt and pepper. They make a satisfying breakfast or brunch.
Pour 1 Tablespoon of heavy cream into each ramekin.
Crack an egg into each ramekin.
Season each egg with salt and pepper.
Place ramekins on a baking sheet and bake at 325℉ for 8-10 minutes or until egg whites are firm.
Notes
Do not increase the heat to speed up the cooking time. Shirred eggs are made with a gentle, slow oven heat.
After 8 minutes, check every 2 minutes until the white is set and the yolk is soft. Oven temperatures vary. Mine took about 14 minutes to cook just right.
Be careful not to overcook or the whites will become hard and rubbery.
The baking dishes will retain heat and continue cooking the eggs after they are removed from the oven.
