Ingredients
- ¾ Cup Butter Softened
- ½ Cup Powdered Sugar
- 2 Ounces Unsweetened Chocolate Melted and Cooled
- ¼ teaspoon Peppermint Extract
- 1½ Cups All-Purpose Flour
- 1 Cup Miniature Semisweet Chocolate Chips
Icing
- 2 Tablespoons Butter Softened
- 1 Cup Powdered Sugar
- 1 Tablespoon Milk
- ¼ teaspoon Peppermint Extract
- 1-2 Drops Green Food Coloring
Drizzle
- ½ Cup Semisweet Chocolate Chips
- ½ teaspoon Shortening
Instructions
- Preheat oven to 375°.
- In a large bowl, cream butter and confectioner's sugar.
- Beat in chocolate and mint extract.
- Gradually add flour.
- Stir in chocolate chips.
- Drop by tablespoonfuls an inch apart on ungreased baking sheet.
- Bake at 375° for 6-8 minutes or until firm.
- Cool for at least 2 minutes before moving to wire rack to finish cooling.
Icing
- Combine icing ingredients.
- Spread over cooled cookies. Let set.
Drizzle
- In microwave, melt chocolate chips and shortening. Stir until smooth.
- Drizzle over cookies.

Ohhh my Gran used to make these! She had her own “secret” recipe but it’s basically exact same as this haha! I’m not a mint fan so I’d get a special one with chocolate on top instead but the rest of the fam always loved these! I have made this before, long time ago. They’re so pretty. I’m making them again today, but I’m not sure whether to freeze them with or without the icing. I’m wondering if it would be better to make them without, freeze, then defrost, and then do the icing and the drizzle? I’ll have to think about it, because I’ll be doing it before you can write me back.
