My fudge isn’t setting! What went wrong?

  • There are a few reasons why your fudge might not be setting. The most common reason is that the sugar mixture wasn’t cooked long enough to reach the correct temperature. Make sure you bring the mixture to a full rolling boil and cook it for the full time specified in the recipe.
  • Another possibility is that you added the chocolate chips and marshmallows too early. Wait until the sugar mixture is hot before adding them.

How can I cut the fudge cleanly? For clean cuts, let the fudge cool completely at room temperature. Then, dip a sharp knife in hot water and wipe it dry between each cut.

My fudge is too crumbly! This can happen if the fudge was overcooked. Next time, try cooking the sugar mixture for a shorter amount of time.

What is the best way to store fudge? Use an airtight container with a tight seal. Cut your fudge into pieces and then wrap each piece (or layer the fudge) in wax paper. This will prevent the pieces from sticking together and drying out. Store your container of fudge in a cool, dry place like a cupboard or pantry.

How long will fudge keep? Fudge will stay fresh for up to two weeks if you follow the storage suggestions above.

Can I freeze fudge? Yes, fudge can be frozen for up to 1 year.

How do I freeze fudge? Let your fudge cool completely, then wrap it tightly in plastic wrap or use a vacuum sealer to create an airtight seal. Wrap it again in aluminum foil for extra protection. Before freezing, label and date your fudge so you know how long it’s been stored. When you’re ready to enjoy your fudge, take it out of the freezer and let it thaw at room temperature for a couple of hours.

Can I store fudge in the refrigerator? Refrigeration is not recommended. The cold air can dry out the fudge and make it crumbly. Stick with room temperature storage or freezing for best results.

Substitutions and Variations

Evaporated Milk: You can substitute sweetened condensed milk in a pinch, but the fudge will be much sweeter and might have a different texture.

Chocolate Chips: You can use milk chocolate, dark chocolate, or even white chocolate chips depending on your preference. Chopped chocolate bars can also be used.

Vanilla Extract: For a twist, try almond extract, peppermint extract, or even rum extract.

Walnuts: Any nut can be used in place of walnuts, such as pecans, almonds, or peanuts.

Mix-ins: Instead of nuts, try chopped dried fruit, or pretzels.

Flavorings: Add a pinch of espresso powder for a mocha fudge, or a teaspoon of peanut butter for a peanut butter fudge.

What to Serve with Fudge

Milk: A glass of cold milk can help cut through the richness of the fudge.

Fruit: Fresh berries or slices of banana can add a refreshing contrast to the chocolate.

Salt: Pretzels or sea salt flakes can add a touch of salty contrast that enhances the sweetness of the fudge.

Beverages: A cup of coffee or tea is a classic pairing with chocolate.
