I first found Dr Pepper Cake in a beat-up church cookbook with sticky notes and coffee rings. Dr Pepper is a Texas original from Waco, and for years, people have been stirring it into chocolate cakes in small-town kitchens. The soda makes a basic mix extra tender with a little warm spice. One bite and it feels like a potluck favorite you grew up with.

Poke cakes had their big moment in the late 60s and 70s, when people started poking warm cakes and pouring in Jello. This is fudgy, with hot fudge and Dr Pepper soaking into every hole. Then on goes the cherry frosting, a drizzle, and a cherry on top for the soda-shop vibe. It’s easy, nostalgic, and the pan always comes back empty.

Ingredients You Will Need

  • Chocolate cake mix: Brings the structure, cocoa flavor, sugar, and built-in leaveners so the cake rises and stays tender.
  • Dr Pepper (in the batter): Adds moisture, sweetness, and the cola spice flavor. The carbonation helps the batter lift for a soft crumb.
  • Hot fudge: It makes the poke filling rich and gooey, boosts the chocolate flavor, and gives you those fudgy pockets in every slice.
  • Dr Pepper (in the fudge): Thins the fudge to a pourable sauce and infuses more soda flavor, so it soaks into the holes.
  • Unsalted butter: Creamy base that gives the frosting body, richness, and a smooth spread.
  • Powdered sugar: Sweetens and helps the frosting set with a soft, fluffy texture.
  • Vanilla extract: Rounds out the sweetness and deepens the overall flavor.
  • Maraschino cherry juice: Adds cherry flavor, a pretty pink tint, and just enough liquid to make the frosting silky.
  • Maraschino cherries: Classic garnish for a soda-shop look and a colorful, sweet cherry on top.

Frequently Asked Questions

Why poke the cake while it is warm? Warm cake absorbs the hot fudge mixture better. Let it cool for about 10 minutes, then poke.

How big should the holes be and how deep? Use the handle of a wooden spoon or a thick straw. Go almost to the bottom so the filling can travel through the cake.

My cake looks a little dense. What happened? Usually, the soda was flat or the batter was overmixed. Next time, use freshly opened soda and mix just until combined.

How do I keep it from getting soggy? Do not pour all the fudge if the cake is saturated. Give it time to soak in, then add more only if the top still looks dry.

My frosting is too thick or too sweet. What can I do? Beat in a little more cherry juice or a splash of milk to loosen. A tiny pinch of salt helps balance the sweetness.

The cherry topping bleeds into the frosting. Any tips? Pat cherries dry with a paper towel and add them just before serving. That keeps the color from running.

Can I use Diet Dr Pepper? It isn’t recommended. Full-sugar soda adds moisture, tenderness, and browning. Diet soda brings bubbles and sweetness but not the bulk, caramelization, or moisture-holding power you need, so the cake can taste flatter, brown less, and turn out drier or crumblier.

Helpful Tips

Use a freshly opened, super fizzy Dr Pepper. Flat soda = flatter flavor and less lift. Pour it down the side of the bowl to keep the fizz.

Give the dry cake mix a quick whisk to break up clumps before adding soda.

Poke in a neat grid and stop just shy of the bottom so slices hold together.

Cool the cake completely before frosting, or the buttercream can slide.

Chill the cake for at least an hour before slicing. Warm a knife under hot water, wipe, and repeat for neat squares.

Round pot with hot fudge and whisk.
While the cake is cooking a small saucepan over medium heat combine the hot fudge and ½ cup Dr. Pepper. Let it come up to a boil, then reduce the heat and let simmer 5 minutes, stirring frequently.

Storage Tips

Store in an airtight container or keep it in the pan with a tight lid. If using plastic wrap, prop it up with a few toothpicks so it doesn’t stick to the frosting.

Refrigerate the cake. The buttercream and fudge need it. It stays fresh 3 to 4 days.

Freeze for longer storage. Wrap the whole chilled cake or individual slices snugly in plastic, then foil, and freeze up to 2 months. Skip the cherries until serving day.

Thaw in the fridge overnight. Unwrap and let it sit at room temperature for 20 to 30 minutes before eating.

Food safety note. Try not to leave it out at room temperature for more than 2 hours.

Substitutions and Variations

Dr Pepper: Cherry cola, regular cola, or root beer all work. Root beer gives a vanilla spice vibe.

Cake Mix: Vanilla or white cake if you want the soda flavor to stand out more.

Frosting: Chocolate buttercream if you want full double chocolate.

Cherry Juice: Skip the cherry juice and use milk or cream in the frosting. Add extra vanilla for a classic cola and chocolate combo.

Mix-Ins: Fold in mini chocolate chips or chopped maraschino cherries.
