Last weekend, we went to visit family. It was my job to come up with a dessert for everyone to enjoy. I didn’t have my own cookbooks, so I searched through my cousin’s collection. That is when I came across this recipe for Blueberry Melba Parfaits.

What Ingredients Will I Need?

  • Fresh or Frozen Raspberries
  • Sugar
  • Corn Starch
  • Fresh or Frozen Blueberries
  • Lemon Juice
  • Vanilla Ice Cream
  • Frozen Orange Juice Concentrate
  • Ground Cinnamon

Helpful Tips for Making Blueberry Melba Parfaits

  • Let ice cream sit out for at least 30 minutes before use.
  • Set out all other frozen ingredients for at least an hour before use.
  • For best presentation, serve in clear glasses.
  • Make the mixtures the day before for best results.
  • Just before serving, layer the ice cream mixture with the berry mixture.

Final Thoughts on Blueberry Melba Parfaits

Overall, this dessert was easy to make and delicious to eat! Everyone in my family enjoyed it. I think it would be perfect for Fourth of July or another summer celebration. The hint of cinnamon and orange in the vanilla ice cream gave it a unique flavor. I would definitely make this again.

Blueberry Melba Parfaits are a delicious layered dessert with berries and vanilla ice cream. They are a perfect summer treat!

Ingredients
  

  • 1 10 ounce Package Frozen Red Raspberries Thawed
  • ΒΌ Cup Sugar
  • 1 Tablespoon Cornstarch
  • 2 16 ounce Package Frozen Blueberries Thawed and Drained
  • 2 teaspoons Lemon Juice
  • 1 Quart Vanilla Ice Cream
  • 2 Tablespoons Frozen Orange Juice Concentrate Thawed
  • 1 teaspoon Ground Cinnamon

Instructions
 

  • Scrape ice cream into a bowl.
  • Stir ice cream to soften.
  • Stir in orange juice concentrate and cinnamon.
  • Freeze 2 to 3 hours or until firm.
  • While ice cream mixture is freezing, drain raspberries.
  • Pour raspberries into measuring cup.
  • Add enough water to make 1 cup.
  • In a saucepan, combine sugar, cornstarch, and raspberries.
  • Cook and stir until thickened and bubbly.
  • Remove from heat.
  • Add blueberries and lemon juice.
  • Stir thoroughly.
  • Cover berry mixture and chill in refrigerator.
  • To serve, alternately layer ice cream mixture and fruit mixture in 6 serving glasses.
  • Serve immediately.
