Easy Chocolate Shortbread Cookies Recipe

Girl Scout Cookies came out this week in our area and the shortbread Trefoils are some of my favorite ones. They are so simple, yet so delicious. I also love anything chocolate. I was craving both, so I decided to make Chocolate Shortbread Cookies!

Chocolate cookies are always yummy, in my opinion. Pairing chocolate with shortbread is just right for a sweet treat. With only 5 ingredients, you can’t go wrong!

What Ingredients Will I Need?

  • Powdered Sugar
  • Butter
  • Vanilla
  • Flour
  • Unsweetened Cocoa

Helpful Tips for Making Chocolate Shortbread Cookies

  • Set butter out at least a half hour before so it is softened enough and easy to mix.
  • Use dark chocolate cocoa powder for a richer flavor.
  • Do not grease the cookie sheet, as this recipe has plenty of butter.
  • Use a pizza cutter for easy, even slicing.
  • Cut into any shape you desire, but cut within 5 minutes of baking for best results.

This recipe was very easy and quick to make. It was perfect for a weeknight sweet treat. I will be making these again. Most shortbread is pricked with a fork. I forgot to do that so that is why mine look a little more like brownies than cookies. They still turned out and tasted great.

Chocolate Shortbread Cookies

Ingredients
  

  • 1 Cup Powdered Sugar
  • 1 Cup Butter softened
  • 1 teaspoon Vanilla
  • 2 Cups Flour
  • ¼ Cup Unsweetened Cocoa

Instructions
 

  • Preheat oven to 325°.
  • Use mixer to beat powdered sugar and butter in a large bowl until light and fluffy.
  • Add vanilla and mix well.
  • Stir in flour and cocoa, then use beat thoroughly with mixer.
  • On ungreased 13"x18" cookie sheet, press dough with fingers or rolling pin to form a rectangle about ½ inch thick.
  • Prick thoroughly with fork if desired.
  • Bake at 325° for 20 minutes or until somewhat firm to the touch.
  • Cut into bars immediately.
  • Let cool for 5 minutes on the cookie sheet, then remove and let cool completely on wire rack.
