Winter time is the perfect time for Old Fashioned Shepherd’s Pie. It’s a hearty meal that’s very filling and warms you up! With St. Patrick’s Day coming up, it’s also the perfect time for this Irish favorite. Shepherd’s Pie is a meal in itself and doesn’t need any sides as it has vegetables, meat, and starch all in one dish!

At my house, I keep it simple: brown a little beef with onion, layer it over tender diced carrots, then spread on a thick blanket of buttery mashed potatoes. I pile the potatoes high so the edges get golden and crisp, and if I’m feeling extra, I’ll pipe a few swirls on top. It goes into a hot oven and comes out bubbling and cozy in about 20 minutes, which is exactly the kind of low-effort win I want on a cold night.

Old Fashioned Shepherd’s Pie
Ingredients
- 1 Pound Ground Beef
- 2 Tablespoons Onion chopped
- 2 Tablespoons Butter
- 1 teaspoon Salt
- 2 Cups Carrots cooked and diced
- 2½ Cups Potatoes mashed
Instructions
- Preheat oven to 400°F.
- Grease 1½ quart heat-resistant glass bowl and set aside.
- Melt butter in skillet.
- Brown beef and onion lightly in melted butter.
- Add salt.
- Place cooked, diced carrots in bottom of well-greased 1½ quart heat-resistant glass bowl.
- Over carrots, pour browned beef mixture.
- Top with mashed potatoes.
- If desired, place remaining mashed potatoes in a cake decorating bag and use tips to pipe a design on top.
- Bake at 400°F for 15 to 20 minutes or until potatoes are lightly browned around the edge.
