
Easy Chicken Bites – Grandpa’s Recipe

You already know that my paternal grandmother was an excellent cook and taught classes, but did you know that my maternal grandfather was an amazing cook as well? He wrote his own recipes. His cooking was always delicious, and his kids and friends would ask for his recipes. They weren’t written down for many years. He finally started writing them down and typing them up. He would carry a binder around with his recipes in them when he would travel to visit family. One time, my uncle took the binder and made copies for his siblings without my grandpa knowing. He wasn’t quite ready to share the recipes yet, but they couldn’t wait any longer. They wanted his cooking even when he wasn’t in town. One of the recipes was for Chicken Bites.

A couple of years ago when I went to visit my grandma, she gave me one of the recipe binders. Grandpa passed away in 2017 at almost 87 years old. He didn’t cook his last few years because he had Alzheimer’s. I’m so glad my family asked him to write down his recipes and that he actually did it. We will always have them now.
My husband is more of a cook than I am as I prefer baking. He decided to start making things from Grandpa’s cookbook for dinner about once a week. So far, everything has been very tasty. The first recipe he made was Chicken Bites. I was so excited to try them and I was not disappointed. They’re basically baked homemade chicken nuggets. Instead of breading, you use potato chips. We chose to use barbecue chips and it was so good. I think other flavors would be good as well. We may try sour cream and onion next time. Let me know what flavor you try!

Chicken Bites – Grandpa’s Recipe
Ingredients
- 1 egg
- 1 T buttermilk
- 4 C Barbecue or other potato chips crushed
- ½ lb boneless skinless chicken breasts cut into 1½ oz cubes
Instructions
- In shallow bowl, whisk egg and milk.
- Put crushed potato chips in a second shallow bowl.
- Dip chicken in egg mixture, then dip in chip mixture and cover all sides with chips.
- Place in single layer on greased cookie sheet.
- Bake at 400° for 10-15 minutes or until juices run clear.
